Taftan (Rich, leavened, rice-flour bread)
Serves 4, preparation time 1 hour, cooking time 10 minutes
Ingredients
Rice flour – 480 gm / 2 ½ cups
Salt to taste
Water
Sugar – 3 gm / ½ tsp
Milk – 240 ml / 1 cup
Clarified butter – 180 gm / 3/4 cup
Yeast – 3 gm / ½ tsp
Melon seeds – 10 gm / 2 tsp
Green coriander, chopped – 10 gm / 2 tsp
Method
1. Sieve flour and salt together.
2. Make a well in the flour. Add water, sugar, milk, clarified butter, yeast and melon seeds. Mix gradually and knead into a soft dough.
3. Divide into 4 equal balls and set aside for half an hour.
4. Dust lightly and roll into 3 ½” discs, ¼ “ thick. Sprinkle with coriander.
5. Bake in a tandoor until brown.
6. Brush with clarified butter and serve hot.
